Tucson, Arizona - November 20, 2025 - - Hidden Hearth is the newest, local, small business joining the Mercado District of Tucson’s west side. The Micro-bakery founded in The Mercado District will act as a wholesale bakery and stone-mill, churning out rustic, locally-sourced, whole-grain breads, unique viennoiserie, and beautiful pastries. All ingredients will be sourced from local food ways. Through our walk-up window and our farmers’ market sales approach, we will reach many of Tucson’s cherished communities. Our vision began 20 years ago, following aspirations to become a small community bakery, sharing the message of healthy eating for whole bodies. Born out of the necessity to furnish the west side and the Mercado District neighbors with whole grain bread, this micro-bakery found the perfect “hidden” spot in an MSA Annex shipping container.
Led by 2X James Beard Award Semi-Finalist Baker Alexander Phaneuf, the Bakery is a partnership between Phaneuf, Adam Weinstein (President & CEO of Gadsden Company) and Kira Dixon-Weinstein (Managing Director of the Mercado District).
Wholesale clients include Agustín Kitchen, Bōs Burger and Crooked Tooth Brewing Company. In-house milling operations set Hidden Hearth’s baking production apart from other local bakeries. Externally, a robust croissant program and a punk-rock style pizza night on Fridays that teams up with Minibar (in the MSA Annex’s Octotillo Lounge) will provide family-fun engagement with healthy eating options. Pizza nights will feature three types of whole grain sourdough pizza. Start date to be announced.
Baked goods will be available for retail purchase by way of pre-order via the website: www.hidden-hearth.com. Customers are asked to place their orders Monday afternoon and pick-up Wednesday mornings at the bakery walk-up window in the MSA Annex. Pick-up hours are 10am-3pm, Tuesday-Saturday.
Hidden Hearth is proud to provide both a means of employment and a food source for the Rio Nuevo and west side community.
